I came across this block of freeze dried tofu
in a JAS Japanese supermarket on St.
Marks.  Needless to say, it fascinated me
and brought me back to a child hood filled of
Tang and Astronaut Ice Cream- America's
own ingenious attempts at creating the meal
of the future.  And, in this future, I was
guaranteed to having a meal spring from a
pill- just add water.   Coincidentally, the
father of Japan's instant meal, salary man
Momofuku Ando, had just passed away.  He
was responsible for Cup of Noodles'
invention.

OK, a little chalky.  But the flavor, once the
saliva moisturizes the block, is definitely
tofu.  In my enthusiasm, I opted to try to
assemble the full meal.  

I hope to attempt the antithesis process to
Santiago Sierra- who's fame was in
documenting rotting food.  Food by nature
is perishable- a natural time consumptive  
process which humanity has spent eternity
trying transcend.  Preservation of fruits to
jams, pickling vegetables and salting meats
are the traditional processes that comes to
mind.  Refrigeration and now freeze drying
as seen with Space Tofu builds on this with
the application of cutting edged
technology. The desired results, however,
are unchanged- that of time travel.  Why
gorge ones self sick with a large meal
today when you can send it to the future.

Ingredients assembled.  All that is needed now is
the time capsule.  The time and date is now
01/12/07.  Someday in the near or distant future,
my future self will consume this meal which I send
through time.
